Healthier Chocolate Pecan Pie


1 cup raw pecans (plus extras for garnish)
12.3 oz silken-firm tofu
2 tsp pure vanilla extract
1/4 tsp salt
2 tsp cornstarch
1/2 cup pure maple syrup
pinch uncut stevia OR 1 tablespoon sugar 
2 tbsp molasses
2 tbsp cocoa powder
 

Instructions

Blend all ingredients, except pecans, in a food processor until very smooth. Then add the pecans and pulse a few times until they’re chopped. Pour into a prepared pie crust.

 
Top with additional pecans if desired.
 
Bake in a preheated oven at 350 degrees, for 45 minutes.
 
Chill for 45-60 minutes (I let mine chill over night).  Slice and enjoy!

Per slice (Makes 6 slices)
  • 245 calories
  • 3 grams fiber
  • 0 mg cholesterol
  • 13g fat (heart-healthy, unsaturated fats from the pecans)
  • 5 grams protein
